Modifiable Microwave Muffins

Everyone has a different morning routine. Some make time for breakfast. Others grab what they can while running out the door. I have developed a quick and easy microwave muffin recipe that can be cooked fast enough for those on the go, but are delicious enough to be worthy of enjoying over a slow morning. Microwave muffins are easy to mix, cook in a flash, and can be easily modified for one’s diet and personal taste.

The basics

Eggs

Eggs help bind the ingredients and aid in the rise, but mashed banana and peanut butter can also be used. You’ll have to add additional liquid to loosen the peanut butter and additional baking powder to help with the rise.

Regular yogurt works great to hydrate the dry ingredients and add a nice flavor to the muffin. Buttermilk, greek yogurt, nut milk, or cottage cheese can be used as substitutes. You may need to add liquid or flour to adjust for your substitution’s water content.

Almond flour is preferred for its rich flavor and low carbohydrate content. Other nut flours or coconut flour are great as well.

Vanilla extract and cinnamon are the standard flavor enhancers for baked goods, but you have other options. Lemon or orange extract, orange blossom water, rose blossom water, saffron, and so many others can spice up the flavor profile of the muffin!

Microwave Muffin

INGREDIENTS

  • 2 Tbsp Butter
  • 2 Eggs, beaten
  • 1/3 Cup yogurt
  • 1 Cup almond flour
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/4 tsp salt

INSTRUCTIONS

  1. In a small mixing bowl, beat the eggs with a fork or small whisk until fully combined and lightly frothy.
  2. Melt the butter in a large coffee mug in the microwave, 15-30 seconds. Swirl the butter to coat the mug and pour the remainder into the eggs.
  3. Add the yogurt, cinnamon, vanilla extract, baking powder and salt. Mix well.
  4. Add the almond flour. Stir to combine.
  5. Mircowave for 3-5 minutes, depending on the microwave. The muffin should release easily when held upside down over a plate or bowl.
  6. If desired, serve with yogurt and fresh fruit.
